Wonderbird Gin No. 61 is a contemporary American gin produced in Mississippi using Mississippi Delta-grown Jasmine rice as its base spirit. Inspired partly by traditional sake-making techniques, the rice is fermented to create a clean foundation before individually distilled botanicals are blended together. The botanical profile includes juniper, coriander, angelica root, Meyer lemon peel, black peppercorn, lemongrass, rosemary, bay leaf, red clover, and Southern pine needles. The result is a complex, balanced gin with floral, citrus, herbal, and spicy characteristics.
