The Hearach First Fill Oloroso Cask Matured is the second core whisky expression from the Isle of Harris Distillery and a richer, sherry-led interpretation of the distillery's lightly peated island spirit. Unlike the standard Hearach recipe, this release is matured entirely in first-fill Oloroso sherry butts selected in Spain and then matured on the Isle of Harris. The large Spanish oak butts add dark fruit, spice, nut and oxidative sherry character while the distillery's light peat and coastal malt remain visible underneath. The whisky is non-chill filtered, contains no artificial colouring and is bottled at 46% ABV. Aromatically it moves through cinnamon, orange peel, cloves, mixed herbs and white chocolate. On the palate, wood smoke and walnut develop into dried thyme, burnt orange, vanilla and clove, ending with a long, dry finish of leather and liquorice.
