A very versatile wine, it makes a fine match with meat dishes and cheese.\n \n Producer Information\n \n Speri Viticoltori is a family-owned wine estate in northern Italy's Valpolicella Classico wine region.with a history dating back to the early part of the 19th Century It is known for its high-quality wines predominantly from the indigenous Valpolicella grape varieties Corvina, Rondinella and Molinara, but also draws upon the lesser known varieties of Oseleta, Rossanella, Pelara and Cabrosina for its wines. The estate vineyards are planted on around 60 hectares (148 acres) of land in the Valpolicella Classico region. The vines occupy some of the most renowned terroir of this region, around notable villages like Fumane, Marano and Negrar. The Speri Viticoltori vineyards, located some 12km (seven miles) northwest of the city of Verona, are planted on traditional stone terraces that enjoy a mild climate moderated by the nearby Lake Garda. All of Speri's vineyards and wines are certified organic. The estate's flagship wine is its Amarone della Valpolicella DOCG – a Valipolicella blend of 70 percent Corvina and Corvinone, with an additional 25 percent Rondinella and 5 percent Molinara. The single-vineyard wine is created from grapes hand-harvested at the 19-hectare (47-acre) Sant'Urbano vineyard in the hills of Fumane (which also provides fruit for the estate's Valpolicella Classico Superiore Sant'Urbano wine. For the Amarone, after picking and sorting, the grapes are left to dry for approximately three to four months before fermentation. After fermentation, the wine is aged in allier oak casks for around two years followed by one year in oak barrel. Speri Viticoltori also makes a Valpolicella Ripasso Classico Superiore, which is made with a second fermentation of Valpolicella Classico wine in the presence of a small amount of Amarone marc. The estate's Valpolicella wine range also includes a Recioto della Valpolicella Classico, Valpolicella Classico, and Grappa di Amarone.
