Sotol La Higuera Wheeleri is an artisanal Mexican spirit produced in Aldama, Chihuahua from 100% Dasylirion wheeleri, commonly known as Desert Spoon. The plants are traditionally cooked in an earthen pit using black oak, hand-milled, naturally fermented with wild yeast in wooden vats, and double distilled in copper alembic stills. The result is a distinctive joven sotol with a balanced combination of herbal, smoky, fruity and mineral characteristics.
