Like most wineries in the region it is best known for its intense, pungent Sauvignon Blanc, but also makes a range of other wines from Pinot Noir, Chardonnay and Riesling. The estate was founded in 1978 by by Neal and Judy Ibbotson, and there are now six vineyard sites throughout the Awatere and Wairau valleys. These vineyards take advantage of Marlborough's cool, dry climate, and a grading system allows the viticulturalists to assess which plots are giving the best fruit each year. Plots are vinified separately to give the winemakers lots of options while blending. Saint Clair also source grapes through relationships with local growers. The estate also boasts holdings in the Gimblett Gravels winegrowing region in Hawke's Bay and produces a range of wines from this site. Saint Clair makes wines across several tiers of quality. The Reserve Range and Pioneer Block wines are some of Saint Clair's top wines, the latter made from specific parcels of grapes in the Saint Clair vineyards. There is also a range of regional varietal wines from Marlborough and Hawke's Bay (known as Origin), and the Vicar's Choice, which is Saint Clair's entry-level range. The winery also produces the Méthode Traditionelle sparkling wine Dawn and a "sub-regional" range called James Sinclair.
