Producer Information Codorníu is a historic Spanish wine producer, well-known for its cava, the country's key sparkling wine produced in the traditional method. The winery itself was founded in 1551 by Jaume Codorníu, but it was not until 1872 that pioneer Josep Raventós produced the inaugural vintage of Spanish sparkling wine, initiating a new era of winemaking in the Penedès region. The cavas are produced from a blend of local grape varieties – Parellada, Macabeo, and Xarel-lo. In 1984, Codorníu was the first winery to use an international variety, Chardonnay, in its Anna de Cordorníu cuvée, a tribute to the last successor of the Codorníu surname. In 2002, Codorníu produced the first rosé cava from Pinot Noir and the very first Blanc de Noir cava in 2008. Cordorníu is now one of the largest cava producers in the world, along with Freixenet. Codorníu has vineyards that span three Denominación de Origen (DO) regions: Penedes, Conca de Barbera, and Costeres del Segre. After harvest, grapes from each region are brought to the same winemaking facility, where they are pressed, fermented separately, and then blended. These blends are then bottled before undergoing secondary fermentation. Codorníu's cavas are aged in bottle, sur lie, for between 9-36 months, before they are riddled and disgorged. Cordorníu's cellars, completed in 1915, were declared a National Historic Artistic Monument by King Don Carlos in 1976. Located in Sant Sadurní d'Anoia, these cellars are home to the winery's annual production of close to five million cases.
