The Chamonix Feldspar Pinot Noir flows with a bright red colour into the glass of the gourmet. Producer Information Cape Chamonix Wine Farm in a South African producer, located in Franschhoek wine region, best known for its premium-quality wines produced from Chardonnay, Pinot Noir and Bordeaux varieties amoungst others. Located on the eastern slopes of the Franschhoek mountain range, Chamonix boasts some of the highest vineyards in South Africa. It was a part of the historic La Cotte estate in the 17th Century and today boasts some 50 hectares (124 acres) of vineyards on the 300 hectare (741 acre) property. Here, stony, clay-rich soils combined with cooling breezes from the mountains help to moderate the warm climate and create ideal terroir for viticulture. A range of grapes flourish here including South Africa's flagship variety, Pinotage. The Chamonix wine portfolio is a range of blended and varietal wines, including sparkling and rosé styles. Notable wines include the varietal Malbec Chamonix Rouge and the Feldspar Pinot Noir which is produced through carbonic maceration. The Greywacke Pinotage is one of Chamonix's more unique wines, and comes from two plots of mineral-rich greywacke soil on a mere 2.5ha (6 acres) of the estate. Vinification is a unique, two-stage process where some grapes are left to dry in the vineyard during the initial harvest, then added to already fermented Pinotage for a second fermentation.
