We are in the Mittel Mosel, a great year at the Schaefer house. Extremely pure fruit, the entire production is centered on wonderful and pure Kabinett and Spätlese , aware that, even if possible, leaving the grapes in the vineyard for longer, already perfectly physiologically ripe, would have taken away the wines’ character of brilliant drinkability and freshnessThis Graacher Himmelreich Riesling Spätlese 2022 (AP 08) from Willi Schaefer offers great drinking pleasure with a mind-boggling mouth and nose combination. On the nose it offers aromas of tropical fruit with also notes of grapefruit. In the mouth we find the aromatic part of the nose and here too the level rises when the savory and mineral part meets the sweet part.The fermentation takes place with natural yeasts, in 1000 liter fuder, where the wine then remains to rise (about six months although the duration depends on the vintage) until the passage into steel is decided. Extremely meticulous in the vineyard and in the cellar, the Schaefers are not very fond of botrytis and, whenever possible, produce wines with a minimum content.
