crystallum peter max pinot noir is a wood-aged red wine made with the pinot noir variety by crystallum in western cape, in the western cape south coast region (south africa). crystallum is a family winery currently run by the third generation, brothers andrew and peter-allan. this project is based in the south african region of walker bay and is known for its experience in making pinot noir wine, knowledge that has been passed down through the generations. crystallum peter max pinot noir is made with a mixture of different plots in hemel-en-aarde ridge, a region famous for its ability to produce fruit on par with a burgundy grand cru. these are high-density vineyards planted 300 metres above sea level and close to the sea. in the winery, 50% of the crystallum peter max pinot noir grapes are destemmed and the rest are vinified whole clusters. fermentation takes place naturally with minimal extraction over 4 weeks with the skins. crystallum peter max pinot noir is a tribute wine to peter and max, the men who cultivated the first vintage. a wonderful pinot noir that stands out for its delicacy and elegance.A wine that follows in the full bodied footsteps of the 2019 with cranberry, pomegranate and bruised strawberry on the nose as well as rose, rosemary and fynbos. The palate shows a darker edge, featuring olive tapenade and soy as well a hint of grilled meat. The tannins are supple but, with a stemmy, pine-needle grip that adds structure along with a fresh acid, this wine is accessible now and will improve through 2030.
