The heads are a husband and wife, Kiichi and Akiko Hakuto, who met at Tokyo University of Agriculture, Department of Fermentation Science. Kiichi is the ninth generation of his family to carry on the brewing tradition and Akiko shares his love of sake. Together they brew, manage and promote their sake, and their home is even connected to the brewery. Now that is dedication!
