This ensamble brings together Espadin and Tobala agaves, combining the dependable structure of Espadin with the more aromatic and expressive character associated with Tobala. The agaves are traditionally cooked in an underground stone-lined pit, crushed by tahona, naturally fermented in open wooden vats and distilled twice in small copper pot stills. The mature agaves are harvested only after years in the ground, allowing the plants to develop concentrated sugars and strong regional character before roasting. Bottled at 45% ABV, the spirit shows ripe pineapple and citrus layered with butter, caramel, vanilla and warm baking spice.
