Tasting Notes
The grapes were harvested by hand in small crates and quickly brought to the winery where there were manually sorted. The grapes were destemmed and slightly crushed then sent to the vertical press where they were gently pressed. Fermentation occurred at low temperatures?approximately 60?Farenheit?and the wine remained on the lees for about three months. Total aging was 4 to 6 months in cement tanks to preserve the full fruit character.
