Pair with delicate seafood like fresh crab or smoked trout.\n \n Producer Information\n Nikolaihof Wachau is one of Austria's oldest wine estates, based in the Unesco-recognized region of Wachau. It is best known for its wines made from Riesling and Grüner Veltliner. The estate's history dates back almost 2000 years to Roman times, and the first written records of winemaking at the estate date to 470 AD. The Saahs family has owned the estate since 1894, and has been practicing biodynamic farming since the 1970s. Nikolaihof's 22 hecatres (54 acres) of vineyard are planted primarily to Riesling and Grüner Veltliner, with 10 percent planted to Weissburgunder, Malvasier, Neuburger and Chardonnay. These vineyard holdings include plots in several of Wachau's top vineyards, including Im Weingebirge, Vom Stein and Steine Hund. The vines are on average 47 years old, and are planted on soils composed of gravel and eroded primary rock. The portfolio is made up of a range of wines at the Federspiel and Smaragd levels of production. The white wines are fermented with indigenous yeasts in Austrian oak vessels, and are aged sur lie in the estate's 700-plus year old cellar – some wines aging up to 15 years before release.
