It grows a range of grape varieties that are common on Long Island including Merlot, Chardonnay, Cabernet Franc and Cabernet Sauvignon, as well as the more unusual Trebbiano and Pinot Noir. Wölffer has built a reputation for its rosé, which is in high demand during summer. The portfolio consists of several different rosés from different blends, in both still and sparkling styles. Christian Wölffer first planted the vineyard in 1988 on a former potato farm. It is one of the few wineries in the Hamptons AVA on Long Island's South Fork, which is dwarfed in production by its more densely planted neighbor, the North Fork AVA. The 22 hectares (54 acres) of Wölffer vines originally went by the name Sagpond Vineyards until 1997, when the estate winery was completed and the label was rebranded. The Wölffer estate vineyard is hand harvested and the red grapes are de-stemmed and hand-sorted. The winery also produces ciders under the No.139 label and the Noblesse Oblige Méthode Traditionelle sparkling rosé from Chardonnay and Pinot Noir. Most recently, Wölffer has expanded its enterprise into Mallorca, where it is producing Petit Verdot, and Mendoza, growing Malbec. The Mendoza vineyard had been selling grapes to other producers until 2015, when it produced its own rosé under the label Finca Wölffer.
