The undisputed specialty of Bouard-Bonnefoy is Chassagne-Montrachet. This is where the winery is located and where the Bouard family owns most of the vineyards. However, the Bouards also have a few plots in neighboring Saint-Aubin. And the wines they make here are truly unparalleled!\n\nTake for example this premier cru Les Combes. The grapes for this beautiful white Burgundy come from the vineyard of the same name not far from Chassagne-Montrachet. The relatively high location and the eastern exposure are special. It produces grapes with fresh acids, which in turn provides tension and finesse in the wine. The rocky, chalky soils also give a pronounced mineral character.\n\nFabrice Bouard harvests the grapes by hand. In the cellar, he also presses the Chardonnay by hand, in his antique vertical wooden press. He transfers the must to mainly used oak barrels. The wine ferments in these with yeasts present on the grapes. The Saint-Aubin then matures for another year on the fine yeasts.
