The most expressive and contemporary wine from Marques de Murrieta, a faithful reflection of the area from which it comes. Dalmau emerged to break new ground in our historic winery and throughout these years it has established itself as a great wine with characteristic personality.\n\nPago Canajas defines Dalmau and gives it its extraordinary character, polished after passing through French oak barrels. Its limited production is determined by the low yields of this exceptional vineyard.\n\nOwn Vineyards Dalmau comes from Pago Canajas, a century-old vineyard in the upper-middle part of our Ygay Estate, at 465 meters above sea level. Its clayey-calcareous soil enjoys a large presence of pebbles on the surface, favoring the optimal ripening of its grapes. At the end of veraison we carry out cluster thinning, limiting production to no more than one kilo per plant and selecting highly concentrated clusters of small grain.\n\nVinification The grapes are destemmed and gently crushed. The varieties ferment separately for 11 days. Tempranillo ferments in stainless steel tanks, Graciano and Cabernet Sauvignon in small oak vats. During vatting, continuous pumping over and delestage work is carried out to promote contact of the must with the skins and extract aromas and polyphenols. After fermentation, the solid parts of the grapes are pressed in vertical presses, using a gentle and slow process that favors the extraction of the color and mature tannins that reside in the skins.\n
