Fabriquero Sotol is a collection of traditional distillates produced in the Mexican Denomination of Origin for Sotol, which include the states of Coahuila, Chihuahua, and Durango. Sotol is a spirit made from the wild sotol plant, also known as the desert spoon, which grows in the arid regions of northern Mexico. Fabriquero Sotol is made by different maestros sotoleros using 100% sotol and traditional methods of production, such as cooking the piñas (hearts) in underground ovens, crushing them by hand, fermenting them in concrete tanks, and distilling them in copper stills
