Louis, a seventh generation vigneron in Burgundy, makes superb wines from no less than 16 appellations (across less than seven hectares) both in the Cote de Beaune and Cote de Nuits. His father, Lucien Boillot originally hailed from Volnay, where his father ran Domaine Henri Boillot, but settled in Gevrey-Chambertin in the 1950s and founded Domaine Lucien Boillot et Fils. The estate was divided between his sons, Louis and Pierre in 2002.
Louis shares his cellar with his other half, Ghislaine Barthod – winemaker and owner of Domaine Ghislaine Barthod, under their home in Chambolle Musigny. It is from here that Louis released the first Domaine Louis Boillot vintage in 2003. Today the domaine is officially managed by their son, Clement who is somewhat of a rising star of both domaines. The vineyards continue to be maintained and farmed using the "lutte raisonnee" ("reasoned struggle") approach, which involves minimal human intervention and the use of fewer manmade chemicals to allow the vines speak for themselves.
Many of the a parcels of which this Gevrey is a blend are extremely old vines, some approaching their 90th year, consequently the wines have a natural concentration and silky persistence. Pair with game, lamb cutlets, Asian fare, and roast beef.
