This blend leads with 41% Cabernet Sauvignon, followed by 22% Cabernet Franc, 34% Merlot and 3% Petit Verdot, aged 24 months in 100% new French oak. The oak dominates in a cedar element as juicy plum and currant tones develop around structured tannins.\n \n Producer Information\n \n Jarvis Winery is a Napa Valley wine producer. It primarily produces red wines from Cabernet Sauvignon and other Bordeaux varieties, but also makes wines from Tempranillo and Chardonnay. The winery was founded by William and Leticia Jarvis, and produced its first vintage in 1992. Since 1994, winemaking has been overseen by consultant Dimitri Tchelistcheff, son of the famed enologist André Tchelistcheff. It is known for its extensive system of of tunnels covering 45,000 square feet (4180 square meters), cut into the Vaca Mountains near Lake Berryessa. This houses the entire winery and all its business operations. The tunnels' parabolic shape is captured in the company logo. Jarvis produces all of its wines from estate-grown fruit. The overall property spans more than 1320 acres (534 hectares) across the Vaca mountainside on volcanic soils and rock. However, it is selectively planted to just 37 acres (15ha) of mostly Cabernet Sauvignon vines. The grapes are vinified in a range of different fermentation vessels, depending on the wines. After fermentation, the wines are transferred to oak cuves from Cognac and allowed to settle before aging in 100 percent new French oak barrels. The wines are bottled unfiltered. One of Jarvis' top wines, the Reserve Cabernet Sauvignon, ages 25 months in 100 percent new French oak barrels and is not released until deemed ready by the winemaker, usually more than five years after the vintage date.
