Fabrice’s first career was as a bodyguard for French dignitaries, and he is equally protective of the quality of the fruit he cultivates. Upon arrival to their cellar, the Chardonnay grapes are gently crushed and then lightly pressed in a time-worn upright wooden press inherited from Claire’s grandparents. For all their white wines, native yeast kicks off the juice’s fermentation in a mixture of older barrels and 20% new wood for a perfect balance with each vintage.\n\nPerched at the crest of an undulating slope, you’ll find Domaine Bouard-Bonnefoy’s Premier Cru ‘Vergers’ vineyard.
