Don Melchor Cabernet Sauvignon Puente Alto 2021 750 ML

The grapes were hand-harvested into 10-kg bins and underwent a double selection process at the winery. Fermentation took place in stainless steel tanks at 25-26°C for 8-10 days, with three daily pump-overs in the first half, reducing to one towards the end. Afterermentation, the wine was macerated for a week at 23-25°C to extract smooth tannins. It was then racked, tasted, and selected by the Don Melchor team before being placed in French oak barrels for malolactic fermentation and aging. In July, the final blend was crafted, and the wine continued aging in barrels before bottling.
