The 2019 Pegaso Granito ripened thoroughly and has 15% alcohol, a little higher than the Pegaso Pizarra from slate soils, but keeping a low pH of 3.35. The grapes from the vines at 800 meters in altitude fermented in stainless steel and oak vats with indigenous yeasts and matured in 500- and 600-liter French oak barrels for 18 months. It feels like this wine behaves better in less warm years, when it ripens slowly. This is tasty and effervescent, with grainy granite tannins.
