It was founded in 1981 by renowned wine industry pioneer Ken Volk, and produces a range of red and white wines from popular Californian grape varieties like Pinot Noir, Merlot, Cabernet Sauvignon, Chardonnay and Viognier. The estate's philosophy centers around multi-vineyard blends, and most of Wild Horse's varietal wines come from several vineyards with a range of different soil compositions and climates. While the bulk of production is made up of classic grape varieties, Wild Horse has a program of small-lot experimentation, producing varieties like Malvasia Bianca, Verdelho, Blaufrankisch and Negrette. Some of these varieties are bottled under the Unbridled label, which is used for a number of single-vineyard and regional wines from Santa Barbara County, Paso Robles, Edna Valley, Arroyo Grande Valley and Santa Maria Valley. Cheval Sauvage, meaning wild horse in French, is the estate's top wine. This Pinot Noir is crafted with fruit from select vineyard lots in Santa Maria Valley and blended barrel by barrel. It represents a small portion of the winery's annual Pinot Noir production. Formerly part of global drinks giant Constellation's portfolio, the winery was acquired by E. & J. Gallo in 2019.
