It produces a range of wines from the Aglianico grape variety, which forms the basis of its renowned Aglianico del Vulture wines. Anselmo Paternoster began bottling and selling wines under the Paternoster family name in 1925. Pino Paternoster went on to expand the family business and was one of the first to produce wines under the Aglianico del Vulture DOC when it was established in 1971. Today, the estate comprises 20 hectares (49 acres) of vines that produce an average of 150,000 bottles of wine every year. The vineyards are on four distinct sites surrounding the town of Barile: Rotondo, Macarico, Pian di Carro and Gelosia. The volcanic soils that typify these vineyards are well-suited to Aglianico, which is primarily set aside for the production of Paternoster's signature range of Aglianico del Vulture wines – Don Anselmo, Rotondo, Synthesi, Giuv and standard Aglianico del Vulture. Don Anselmo is the estate's flagship wine, and was created in honor of the Paternoster family's founding winemaker. The grapes are harvested from old vines situated approximately 643 meters (2109 feet) above sea level. In the winery, the grapes are crushed, destemmed and then macerated in temperature-controlled stainless steel tanks for 15 days. After vinification, the wine is aged in a mixture of Slavonian and French oak barrels, and is then bottle-aged for 12 months prior to release. Paternoster is also known for its red and white Basilicata IGT wines produced from Aglianico, Moscato and Fiano. There is also a range of Basilicata-classified wines within the portfolio. In 2016, the Tommasi family acquired a large stake in the Paternoster estate.
