The Mac Forbes Rieslings are built little differently to the average Australian Riesling.\n \n Where most producers now-a-days look for bone dry Riesling as their style staple, Mac isn't afraid of a little residual sugar. For him, it's all about getting finding the best balance for each wine, and with the tight granite soils of Strathbogie giving the fruit an intense minerality, Mac feels a touch of R/S puts this nicely back in balance.\n \n The Caveat Vineyard is where the fruit comes from, and it's the first vineyard to get picked, with grapes full of natural acid and lending a lovely tension to the finished wine. Can go for a while in the cellar, too.
