From the East Sussex coast, this opulent sparkler is a blend of all three Champagne varieties. Cashews roasted in butter lead on the nose, along with orange blossom, greengage plum, lemon verbena and a distinctive smoky note to the yeasty toast. There’s richness in the mouth as well. No nuttiness here, and the bubbles fizzle out fairly quickly, but citrus, stone fruit and cream are buoyed by a lovely crisp, maritime acidity.
