The flavors gravitate to ripe cantaloupe and anise while the minerality from the soft water is evident in the finish.\n \n Distillery Information\n Founded in 1868, Imada ShuzÅ is located in front of the Seto Inland Sea, in Hiroshima Prefecture, known as the historical cradle of ginjo sake making. Built in the heart of the mountainous Chugoku region, in the village of Akitsu, known as a village where many toji (master blenders) and kurabito (brewery workers) come from, the brewery has the particularity of being managed by a woman Miho Imada, one of the few women toji in Japan. She is the heir of the family know-how and her ambition is to favor the use of old and traditional techniques. Following this philosophy, Imada ShuzÅ is the only one to use an ancient rice variety for the production of its sakes bottled under the Fukucho brand created in 2014: the Hattanso, which is larger and therefore more difficult to cultivate, in addition to the most famous of sake rice: the Yamada Nishiki. All of the House's sake and fruit liqueurs are inspired by the region: its rice, its pure water, its seafood such as oysters, or its agricultural specialties such as citrus.
