After being harvested by hand, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. This is followed by fermentation in small oak barrels at controlled temperatures. At the end of fermentation, the powerful Montecucco Rosso Riserva Doc is matured for a few months in oak barriques. Once the wine is finished, the Montecucco Rosso Riserva Doc is carefully harmonized.
