This is a white Champagne made exclusively from Grand Cru Classe of Bouzy, one of the 17 villages thus classified at the very top of the Champagnes quality hierarchy.\n\nThis is a Champagne blend of Bouzy wines made from 80% Pinot Noir and 20% Chardonnay grape varieties. After hand-harvesting, the cuvee is aged in French oak barrels for a few months, then bottled to be lowered into deep cellars for optimal ageing.\n\nLa robe is brilliant gold. On the nose as on the palate: a broad palette of red berries such as wild strawberry or blueberry or Burlat cherry, followed by hints of citrus from lychee to candied mirabelle plum ending on lightly woody and vanilla Italian bergamot.\n\nWine and food pairings: Marennes-Oleron oysters, gambas or lobster flambeed with Cognac Dubosquet XO, sea bass a la plancha, white meats with truffled morel mushroom sauce.\n\nPerfect on a citrus tart with lemon or Crete apricots or a Norwegian vanilla and dark chocolate omelette.\n\nChampagne par excellence de cave, protected from light and trepidation, bottle laid down with optimal hygrometry of 70%.
